baking soda:
1 teaspoon double acting = 1/4 teas. baking soda plus 1/2 cup buttermilk
butter:
1 cup = 1 cup margarine or 1/8 cup lard plus 1/2 teas. salt
chocolate:
1 square unsweetened = 3 Tbsp. cocoa plus 1 Tbsp. shortening
cream:
1 cup coffee cream = 3 Tbsp. butter plus 7/8 cup milk
1 cup heavy cream = 1/3 cup butter plus 3/4 cup milk
eggs:
1 whole egg = 2 egg yolks
flour:
1 tablespoon = 1/2 teas. corn starch
(for thickening)
herbs:
1 tablespoon fresh = 1 teaspoon dried
milk:
1 cup whole milk = 1/2 cup evaporated milk plus 1/2 cup water
1 cup sour milk = 1 Tbsp. lemon juice plus sweet milk to make 1 cup
honey:
1 cup + 1 to 1 1/2 cups sugar plus 1/4 cup liquid
