Squash Casserole Recipe
Delicious squash casserole
1 lb. yellow squash
1 med. onion
1 tea. salt
1-1/2 c. sharp cheddar, grated
1/4 stick butter
1 egg
1/4 c. milk
8 Ritz crackers, crushed
2 Tbsp. Sharp cheese, grated
Slice squash, dice onion and cook until tender in
small amount of water. Drain. Place squash in a large
mixing bowl and mash while still very hot, add grated
cheese and butter. Mash and stir until melted.
Slightly beat egg and milk together. Stir into squash
mixture adding pepper to taste. Add crushed crackers.
Pour into buttered casserole dish. Sprinkle with 2
tablespoons shredded cheese. Cook in 350' oven until
set and browned, about 45 minutes.
