Easy Delicious Potato Cakes Recipe
Leftover mashed potatoes
1 egg per 2 large cakes
Flour
Crisco
Fry pan
Mix potatoes with a fork to get clumps out. Add egg.
Mix up with fork thoroughly. Sprinkle some flour in
mixture, then mix thoroughly again. Keep adding flour
to mixture until potato texture is a little sticky.
Don't want to overdue the flour, get's the cake dry.
Melt Crisco in fry pan. Divide mixture in to 2 cakes.
Scoop each into fry pan and cook on low to medium heat
until each side is golden crisp.
Tip: I start out cooking on low, then turn the heat
up a little bit. I do that for both sides.
