Cauliflower Au Gratin's
Cauliflower Au Gratin's Recipe
4 cups cauliflower, broken into flowerets
2 cups milk
2 Tbsp. quick cooking tapioca
4 oz. (1 cup) shredded American cheese
2 Tbsp. chopped pimiento
1 Tbsp. chopped parsley
1/2 tsp. salt
1 cup cracker crumbs
2 Tbsp. butter, melted
In medium saucepan, cook cauliflower in boiling salted water until crisp-tender, about 5 minutes; drain well. Place in 1 1/2 quart casserole. Heat oven to 350'. In same saucepan, over medium heat, cook milk and tapioca until thickened, stirring constantly. Add cheese, pimiento, parsley and salt; stir until cheese is melted. Pour sauce over cauliflower. In small bowl, combine cracker crumbs and butter; mix well. Sprinkle over sauce. Bake at 350' for 15 to 20 minutes. 10 (1/2 cup) servings.
Broccoli, green beans, or carrots can be combined with or substitute for cauliflower.
