Fresh Herbs and Rice
1 1/2 cups long grain white rice
1 tbsp. plus 1/2 teas. kosher salt
2 tbsp. unsalted butter
1/4 cup freshly chopped herbs, like chives, basil, mint ect. ect.
Bring a large pot of water to boil. Add rice and 1 tbsp. of salt and cook, stirring occasionally until rice is done. Drain through mesh sleeve and rinse under cold water. Drain as much as possible.
Melt the butter in a skillet over medium heat. Add the rice and remaining 1/2 teas. salt, then stir to coat all the rice with the butter. Transfer to a bowl add herbs, stir, then serve. Makes 4 servings.
